This restaurant, which was first run by Diego and Patrizia Pavan, opened in 1986 with the name of Sant’Elmos and only became Al Vecchio Violino in 1996. Its distinctive features were already the high quality of the products used and the complete professionalism of its staff. 1996 was also the year in which the restaurant had a restyling. It was enhanced with stucco, frames, scarp walls, columns, paintings, period photos and a lacunar ceiling, with a slightly Venetian, slightly Viennese feel. Cuisine at Al Vecchio Violino is decidedly Veneto-influenced, with a menu that offers typical dishes from the coast and from the inland area, reinterpreted by the chef with the very best seasonal produce. For example: fettuccine with razor clams, prawn tails with cherry tomatoes and spaghetti alla chitarra with mantis shrimp and asparagus tips. There are also pizzas baked in a wood-burning oven, homemade desserts and a carefully-selected wine list with around fifty labels.
